It all started when Larry spied a "Brooklyn Black-Out Cake" on Unique Sweets. Trying to scratch that itch, he had a piece of chocolate cake while we were out and came to the sad realization that I have spoiled him ROTTEN when it comes to Belgium Chocolate Substance Abuse. That's when he asked for something resembling the BB-OC.
The cake/icing are from Smitten Kitchen-- I cut her recipe in half and baked it in two 6" pans, but they rose so high that I split those. Then I remembered a pastry chef who brushed her cakes with Coke to keep them moist, so I bought a 20-oz bottle and reduced that to a 4-oz syrup.
Then I remembered that I had one jar left of the raspberry/almond/chocolate jam so I thinned that out with some of the ganache icing.
And the end result? Four split layers, brushed with Coke syrup, spread with raspberry chocolate jam, stacked and covered with ganache. So...no resemblence to BB-OC as it has neither chocolate pudding nor cake crumbs on the sides. However...
