Jiffy Corn Mix (dry) as fried green tomatoes dredge -DELISH

I wanted to make fried green tomatoes last night but didn't have any corn meal. But I did have a Jiffy corn bread mix (made in Michigan:). OMG was it ever delish. All I did was add some garlic powder, pepper and paprika.

 
Spill the beans...or the tomato seeds, Deb. What's the rest of your method. I was

just graced with fresh mountain tomatoes from neighbors and have been enjoying them sliced & salted with The Girls fresh eggs each morning. But I'm in The South, so magazines here are pushing tomato pie. Much as I'm craving that, I think I'd rather do something I can eat in one setting than be left alone with a pie...any pie.

 
Not Deb but the Jiffy mix is a great idea. I put tomatoes in buttermilk then cornmeal/flour mixture

and then saute in oil until well browned on both sides.
I serve with a sriracha mayo mixture.
This is a good method for fried whole okra pods also. OR even red tomatoes--they fry too. LOL
I haven't been able to order cornmeal from Amazon (getting groceries delivered) so the Jiffy is really a good tip for me personally.

 
Buttermilk/Franks Hot Sauce Dip (twice) and...

Get your tomato slices as dry as possible.

Pour some buttermilk in a bowl and add a dashes of Frank's Hot Sauce.

Dip into buttermilk mixture, then Jiffy mixture, then repeat.

Key to keeping crust on when flipping: Use spatula, not tongs. I have a big, round, flat metal spatula with holes; works perfectly.

 
Neighbors tomatoes had ripened too much (making them perfect for BLT). So I

picked up a hard green heirloom tomato today at Whole Foods. Looking forward to this with some homemade grits.

 
Very crunchy & tasty, but most of my coating fell off. I felt the overall taste was a bit too sweet

...and really wasn't expecting that (especially after dumping too much Frank's Hot sauce in the buttermilk. Didn't realize the drop option was part of the lid. I just unscrewed the lid and dumped).

But then I've never actually made their corn muffins. I've only used the muffin mix to make Michael's corn cake hack. I knew that was sweet but thought it came from the cake mix portion.

Not sure what I did wrong that most of the coating slid off. I did dip in the corn mix first, then buttermilk, then cornmeal.

Ooh. I salted my tomato slabs...do you think that drew out moisture? I didn't think to blot first and I'd like to get that step right because it was nicely crunchy.

 
Tomatoes must be dry

They are sweet and I get it if that isn't appealing!

I let my slices (no salting) sit on paper towel for about 30 minutes and blotted each side.

Dipped slices in buttermilk. Then in the cornbread mixture. Then dipped again in buttermilk. Then final dip in cornbread mixture. The only why I could keep the crust on what to use a spatula to turn it.
