Joan's Pumpkin Bread
Makes 4 1-pound loaves
4 cups sugar
1 29-ounce can pumpkin
3 eggs
1 cup oil
5 cups all purpose flour
1 tablespoon baking soda
2 teaspoons cinnamon
1-1/2 teaspoons ground cloves
1 teaspoon salt
2 cups coarsely chopped dates
2 cups coarsely chopped toasted walnuts
Whipped cream cheese (optional)
Preheat oven to 350 Degrees F. Grease 4 1-pound coffee cans or 4 8 x 4 inch loaf pans.
Combine sugar, pumpkin and eggs in large bowl and beat by hand or with mixer until blended. Add oil and beat to combine. Thoroughly blend in flour, soda, cinnamon, cloves and salt. Stir in dates and nuts. Fill prepared pans 3/4 full to allow for rising during baking. Bake about 1 hour, or until toothpick inserted near center of loaf comes out clean and bread has pulled away slightly from sides of pan. Serve with whipped cream cheese.
Bread may be baked in ring molds, cupcake pans or other small pans; test after 20 minutes for doneness.
Bread may be frozen indefinitely.
