Himmm, I don't have any here to measure. I don't think it's quite a half cup. I buy dried coconut

at Whole Foods in bulk--if you do that you can measure it there.

I usually make a double batch, which makes it easier to weigh, and I don't think the measurement is critical. Just be sure to use dried coconut rather than the more common shredded coconut.

Melissa has made these too, so maybe you'll be the T&T 3rd.

 
Oh yeah, definitely making these in Hawaii.... will report back - THX for the hint on weighing it!

I've driven 60 miles looking for dried coconut and chipotles in adobe with no luck.

I did find the tabasco chipotle but what do I do about the coconut...toast it?

 
also Indian market. The chipotles in adobe should be everywhere... do you have a Mexican food store?

 
The sixty miles covered all the mkts in the area. Double the mileage for

Fresh Mkt or Supercenters. One natural food store 30 miles away. I'm in the boonies, Jane. Most of the local population travel by horse and buggy.

 
I agree. That should work fine. You don't want big shreds--the dried is more subtle.

is the dried you use also unsweetened? If the grocery store carries Bob's Red Mill products, they

might carry the coconut---it's in our natural foods sections.

 
I made the coconut cream bars! The finer unsweetened shred was perfect

Next time I would double the cream filling and use a different shortbread crust -- mine turned out too thin and hard (for my taste), although I didn't get any complaints from the peanut gallery smileys/smile.gif
