June is Dairy Month & there's a contest at work!

I do work for a place with a large working dairy operation, so someone thought a dessert contest (we had a cheesecake one this past winter) in honor of and featuring (?) dairy would be good. I'm willing, but uninspired to think/search out what to do! Needs to: be able to be made the night before & be reasonable transportable; probably not include ice cream unless I can assemble the final product after my commute; be able to hold up well fully assembled for several hours (refrigeration/freezing OK) as I won't have time to put it together once the work day is underway. Help?

 
I agree that a trifle would be a good choice. You could do a patriotic one with berries, pound cake

and whipped cream.

ago that may give you inspiration. I don't know what magazine I took it from, but, it is absolutely beautiful and loaded with dairy. It is called Angel Cream Melba and contains gelatin, milk, vanilla, heavy cream. You make a sauce for it with frozen raspberries and frozen peaches in quick thaw pouch.

The recipe is very much like a panna cotta only made in a 12 cup bundt pan or ring mold. The presentation is lovely.

Creme Brulee, Rhubarb crumble trifle with whipped cream or Caramel pudding springs to mind.

If you go into "other dairy products", you can find recipes using butter and yogurt etc.

Also, Land o Lakes has a very nice site for dairy recipes.

I love trifle in the summer. The latest Country Living had a patriotic colored trifle, which is basically strawberry, blueberry, white cake and whipped cream and custard. I don't have the magazine handy right now. I like to use Danish Dessert for the fruit mixture layer. It's a cornstarch pudding(by the jello mixes) that ends up clear red, like those strawberry pie glazes. It's nice and tart and doesn't get the cake as soggy as when I use just plain sugared fruit.

I've printed a couple of these for future reference. I ended up doing the Raspberry Truffle cheesecake brownies listed further down the forum and they were well rec'd, but not the winner smileys/smile.gif At work, I ended up voting for a butterscotch bread pudding, but a baklava was a close second!
