of the pan, even though I used nonstick, and brushed it liberally with melted butter. (I halved the recipe and used one pan). Next time I'll brush it with a paste of flour and melted butter, and see if that helps.

(I tried the donuts with and without the topping, and liked them best without).

By the way, as an added bonus, these are pretty lowfat, and *very* lowfat without the topping.

BAKED CINNAMON DONUTS

INGREDIENTS:

* 2 cups flour

* 2 teaspoons baking powder

* 2 teaspoons cinnamon

* 1/2 teaspoon nutmeg

* 1/4 teaspoon mace (I omitted it)

* 1/2 teaspoon salt

* 1 1/2 cups sugar (I used 1 1/3 cups)

* 1 large egg, beaten

* 1 1/4 cups milk

* 2 tablespoons butter, melted

* 2 teaspoons vanilla

TOPPING:

* 3/4 cup brown sugar

* 1 1/2 teaspoons cinnamon

* 1/4 cup butter, melted

DIRECTIONS:

Preheat oven to 350 F. Grease two 6-cup donut tins. (I used dark nonstick, and kept the temperature at 350 F.)

1. Mix all 7 dry ingredients in a medium size bowl.

2. In a smaller bowl, beat egg. Mix egg with milk and melted butter. Add vanilla.

3. Stir milk mixture into dry ingredients until just combined being careful NOT to overmix. Pour into donut baking tins, filling approximately 3/4 full.

4. Mix cinnamon into brown sugar and sprinkle over donuts. Drizzle or spoon melted butter over top of each donut.

5. Bake 17 minutes. (I baked about 18-19 minutes).
