Fishmongers always wash their hands in cold water. This closes the pores and stops the smelly oils penetrating the skin with long term results.

I received this recipe from a cruising gal who, sailing the Caribbean waters, lived for a few years with her family on a 34foot sail boat.

Grease and Line a Loaf Tin

Heat 75ml of butter till melted

Add 200ml flour and stir in cooking while you take a swig!

Add 300ml milk all at once and keep stiring

Season well and don't stop stirring while it thickens over a medium heat

Add 155grams cream

4 beaten eggs

salt 'n pepper

5ml Chick stock powder

5ml basil

250ml cooked rice

750grams of minced fish

Bake in the loaf tin at 180* for 45 mins

Cool and then chill.

Turn out on a plate, slice and serve with

Shrimp Sauce

200ml mayonaise

190g shrimp, tinned or cooked, peeled and chopped

125ml cream

5ml chopped chives

12.5ml tomato paste

few drops of tobasco

5ml lemon juice

Mix all together gentley

Drink:

Old Orange Blossom:

Shake with ice, three parts of gin and one part fresh orange juice. Strain and add half a slice of orange.

Sailing Tale:

During a lesson in a Caribbean island school, a student was asked to define "debate". He explained "'Tis what goes on de hook to catch de fish"!
