Just finished having one of my favorite meals. Spinach Salad with Honey Mustard Dressing

and slices of Olive Cheese Bread. The Honey Mustard Dressing is a recipe I got many years ago that is from Flagstaff House in Boulder, CO. Probably from Gourmet magazine but I really don't remember. It's delicious! I always add a little more honey and lemon juice, to the taste we like. I'll post it here. and the Olive Cheese Bread is PW's. Delicious!

Spinach Salad With Honey Mustard Poppy Seed Dressing

Serving 4

1 pint fresh spinach -- coarsely torn

1 cup Mayonnaise

1 tablespoon poppy seeds

2 tablespoons Dijon mustard

1/4 cup yellow mustard

2 tablespoons honey

1/4 teaspoon fresh tarragon -- chopped

1/4 lemon

1 1/2 drops red wine vinegar

1 1/2 drops salt -- to taste

1 1/2 drops black pepper -- to taste

Preparing the Dressing:

Place the mayonnaise in a mixing bowl and stir in the 2 types of mustard, 1/2 to 1 cup honey (adjust to your taste), tarragon, dash red wine vinegar, juice of one lemon, poppy seed, and salt/pepper to taste. Stir until thoroughly blended.

Serve over a bed of torn spinach.

SUGGESTED GARNISHES:

Crumbled, cooked bacon

Crumbled hard boiled eggs

Sections of Mandarin oranges

Bean sprouts

now see, tossing some canned salmon on this salad would be good. the dressing sounds bold enough

to give the salmon some competition

 
Yes it would. I really enjoy salads with fish. One time on one of our yearly

trips back to the States I had a salad in the Keys. I think it might have been Key Largo. It was a large Caesar Salad and had blackened Cod on top. I was in love and now it is one of our favorite things. So simple and so much flavor.
