Just finished the Christmas cakes

Three English style fruit cakes (two shown) and eight Madeira Bolos de Mel. Just in time. I am NEVER making three fruit cakes again, ever. And I'm changing my Royal icing recipe because this one always flumps. A friend suggested Mary Berry's, I'll try that next year.

Those are lovely, Lana! It looks like a Christmas decoration all by itself.

I'm right with you on never making fruit cakes again. I gave a mini one to my house contractor who gave it to his 75-year old mother who said it was the best fruit cake she's ever had in her entire life. I didn't have the heart to tell him the glacé cherries alone had cost $18. And I left out anything green or bitter so it didn't look like those Claxton fruit cake bricks.

BAM! (Broken Ankle Maria) tried Stella Park's version of Royal icing and liked it. It used powdered sugar without cornstarch. I found the sugar but haven't tried it yet.
