Just got home from New Orleans and have 15# shrimp to freeze--

I have a bag of heads I just pulled. How do I freeze the heads for stock? in water or just by themselves? TIA

i've had good luck both ways. you can...

reduce the stock if that's the way you go and save freezer space.

I've also seen a technique to bring out more flavor is to roast the shells/heads first.
