That looks great!! It looks like they coated in parmesan then fried?

I think they load the skillet with shredded Parmesan, lay the bread on and top with cheese

Once it's almost done, the bread is folded in half and finished. The hamburgers have a 3" 'foot' of cheese all around - a thing of beauty!
