Just in case no one's mentioned this recipe in awhile...

Forgot to mention a couple things...

We like a little more heat in this, so we always use Pepper Jack cheese on top (instead of the Monterrey Jack) and I often cook the chicken with a little garlic, cumin, and salsa in the crockpot for an added flavor boost.

But anyway you roll it, these are pure comfort food!

FYI, I have made this into soup and a pasta dish, using the same basic ingredients, and tweaking them a bit. The pasta was especially good. Thanks for the kudos!
