I made this last night and put it into 2 extra long, wide loaf pans--It is a keeper. . .
Very tasty, very moist. I added extra ginger, very good (I like ginger).
This cake is VERY easy to make and the instructions are clear. It mixes like a quick bread; I used a whisk, as instructed. Also, I added a cup of golden raisins and will add more next time. Maybe try nuts and some mini chocolate chips as well--I love pumpkin bread/cake with mini chocolate chips, just a few, and they have to be mini. BUT it is quite delicious just as is, and rose well also.
