Just ordered a 22 qt Rival roaster

mainly to cook whole country hams in - works beautifully. Anyone have experiences/recipes/reference stuff with/for a roaster?

My mom cooks our turkeys in hers. It doesn't brown (we don't carve at table anyway)

and since it kind of "steam" roasts they are very moist. (If I'm around it also keeps me from making my self sick eating crunch brown turkey skin).

My grandmother used hers to cook or keep warm for crowds. I can remember parties when she had it full of beef burgundy.

 
Our favorite use is to simmer the turkey carcass the day after.

It's perfect for it. You set it on low and it can go all day without much supervision.

We also use it to make ham and bean soup from the country ham bone, and then freeze and distribute it to friends. We've already had a few folks asking if we'll be doing that again this year and putting in their requests.

 
CathyZ made one in her roaster for us one year and it was marvelous! frees the oven for other stuff
