Just to clarify - is that 1 1/4 POUNDS of flour, and not cups?

That would make it 20 ounces, which would be:

4 1/2 (4 1/2) oz cups or 4 (5 oz) cups

I use a 4 1/2 oz cup, which is lightly spooned and swept.

But if you scoop and sweep, it would be closer to the 5 oz cup.

Is this a chewy cookie?

Yes, it's 1 1/4 lbs (pounds) of white flour as printed in a UW Wisconsin student newspaper. The

two bakery-restaurants have since closed, but I purchased the cookbook, and they shared this recipe with readers who request recipes.

I've only made their chicken pot pie, and oatmeal cookies.

That's about 5 cups of flour...which works for the amount of sugar, but seems

higher for the amount of fat. I've used a pound of butter (2 cups of fat) with over 5 cups of flour/ground oats for the Neiman Marcus cookies. Not many chips for this amount of sugar/flour.
