had a piece of fresh white king salmon. Rubbed it with some Penzey's Ozark Blend and squeezed a lemon over, added some fresh asparagus. Ordered some big and smaller sheets, this was a almost 1# steak so took a big one on the bias and a small one to fill in. Tied it with some leek tops I had saved for this.

Put my cast iron grill pan under broiler and when it was hot, put it on, 12 minutes +or- was perfect medium rare. Turned it twice.

I think you would definately get more smoke flavor in charcoal or gas grill, but it was really, really, really good! Also think I will soak sheets in wine?
