Middle Street Crumb Cake

This tasty crumb cake is a creation of Middle Street Foods in the town of Newburyport, Massachusetts.

4 to 6 servings

1-1/2 cups all purpose flour

1 cup sugar

1 tablespoon baking powder

1/2 cup vegetable oil

1/4 cup milk

2 large eggs, beaten to blend

1/3 cup firmly packed light brown sugar

2 teaspoons ground cinnamon

3 tablespoons unsalted butter, cut into pieces

Preheat oven to 300 Degrees F. Mix first 3 ingredients in large bowl. Add oil, milk and eggs and stir until dry ingredients are just moistened. Transfer batter to ungreased 8-inch square baking pan. Sprinkle with brown sugar, then cinnamon. Dot top with butter. Bake until tester inserted in center comes out clean, about 50 minutes. Cool slightly. Cut into squares to serve.

Does the top when baked actually form crumbs, or is it more like cinnamon sugar crunch?

 
Mo, Definitely like cinnamon sugar crunch......

You can actually make a full crumb crust also and it would be wonderful also.

 
Still sounds good, and more importantly, quick.It's nice to have a good go-to quickie cake :)thanks!
