The size, holiday look and taste are all there. I didn't have mini-chips so I buzzed some 60% chips. That make the overall cookie a lot less sweet and a bit more...adult-ish. Since this will be going to families with kids, I'm going to use the semi-sweet, which is probably around 45%.
I tested the mini-pareils and while the color is great, I didn't quite like those micro-ball bearings getting stuck in my teeth, so I'll be using the large sanding sugar instead.
I used my "purple" scoop which is equal to ~1.5 TBL of dough and only dipped one side of the rolled dough. The red/white candies are Hershey's Kisses with "candy canes" on the wrapper. They are pepper-minty and had an additional crunch, not smooth like normal kisses.
Oh God...I HOPE Hershey deliberately added something crunchy and it wasn't....something else.
