Kermit's Rice Krispy Oatmeal Cookie Bars

Last year I spent a few months cooking at a sorority. A staff of 6 prepared breakfast, lunch, and dinner for 40-80 college girls--depending on who was around for the various meals.

There's an amazing culture established between the cooks at sororities and fraternities. Many of these cooks have been working here for years...including Kermit. (What do you make at fraternities? Meat. Meat. Meat.)

Kermit has been a lead cook in the Greek system for over 20 years. As he aged, he began loosing his eyesight. Kermit took on the chef de cuisine position, handling everything when my friend, the lead chef, was off duty.

Though nearly blind, it was amazing to see him work in the kitchen. And after years of doing high volume dining, his food was incredible.

I managed to snag this recipe and a book recommendation from Kirby, "Large Quantity Recipes" from the American Dietetic Association.

These are amazing!

Kermit's Rice Krispy Oatmeal Cookie Bars

1 cup butter

1 cup sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 cup oatmeal

3 cups Rice Krispies

1 cup sweetened coconut

1 teaspoon salt

1/2 teaspoon baking soda

Use standard cookie method and bake at 350. If I remember right, he used a half sheet pan for the bar cookies.

Kirby's note: these can be made into bars or cookies. Sometimes he likes to add chocolate chips.
