Last evening I roasted Kokee Trout using a Welsh recipe. Kokee is way up in the mountains here on Kauai and fisher-people in the know go early in the season and catch a lot of fish. Luckily my former Boss only eats ocean fish! He usually catches and releases Trout but this time he brought a beautiful catch to me. The Trout here has fairly pink flesh and the taste, while decidedly Trout, is different than Trout I've had other places. It was delicious.
This was so easy: I used whole Trout, cleaned of course. I roasted thick cut bacon for 10 min on a broiler pan at 400 degrees. Then I put salt and pepper inside the Trout (did not remove bones), then put chopped parsley, a thin slice of onion and about a tsp of butter inside. I put the trout on top of the bacon and roasted at 400 degrees for about 20 minutes. Then, to serve, I opened the Trout just wide enough to take out the entire bone structure- it came out without any resistance with tongs. I put two slices of bacon inside the cavity and served. Here it is going into the oven after the first roast of the bacon- it took just minutes to prepare.
