Kye's Fresh Corn Salad - Had this the other night, begged shamelessly for the recipe. So good!

Love it...this is perfect for summer fare. It has a lovely balance of flavors. YUM! I'll be making this salad all summer long.

Fresh Corn Salad

Corn kernels from 5 fresh sweet corn

1 avocado, chopped

1/4 C finely chopped red onion

2 T chopped cilantro

2-3 T fresh lime juice

1/2 t salt

Mix everything together.

I make one similar that has black beans and the corn is roasted on the grill...

It does have tomato and a bit of jalapeno in it and it's awesome! I shake a bit of cumin in it, too. smileys/smile.gif

Corn here has been the best in years. HUGE luscious ears!
