I let this second batch go for 3 days (72 hours) and while still good, there was definitely more of a "tang" to the chicken then there was at the 48-hour mark.
And I STILL haven't been able to test it out over coals. This time I added LIGHTER FLUID to the DB (damn briquettes) and while they flamed brightly (just like my hopes), I was in BED before they turned white enough to use for charring.
See. Yet MORE PROOF that I would have DIED if I existed during a time where I had to cook over fire, preserve or grow my own food.
Full Disclosure: I go to bed IN THE DAYLIGHT (8:30 PM) now that I have a 4:00 AM alarm, thank you very much LM.
