Lasagna withouth ricotta or cottage cheese

have one grand who cannot/will not/ has never had, ricotta, cottage or cream cheeses. I want to make a lasagna he will eat....bechamel sauce?...help....thanks gang....hmmm, I'm assuming my name goes somewhere...oh well....ella-TO

 
Hi, Ella! I believe bechamel is the classic ingredient in lasagna and...

the use of ricotta started with Italian Americans in NY (I think I read that somewhere!) but I believe that in one of Marcella Hazan's cookbooks, there is such a recipe...I do have her "Essentials of Italian Cooking" at home and I think it's in there. I'll bet you anything that Mario Batali might also have a lasagna recipe that uses bechamel.

I have never used ricotta or cottage cheese for lasagna. I make a nice cheese sauce with cheddar and a a few squirts of Tabasco.

But if you'd rather not have cheese at all, why not a white sauce flavoured with chopped spring onions and Tabasco?

The whole thing is so filling and rich anyway!

It just hit me ... Ella, please read!

If you wish to be kosher, you can't have a white or cheese sauce. Ella, LOL, then you'll just have to skip the lasagna!!

Hi Val and Zuri....teehee Zuri.....no, I don't have to do that....don't do that....have never done that....ROFL.....
But, know what I did?....we have a "fine food" shop near here that makes a large one, enough for 6-8, it's frozen and has lottsa things in it, and no ricotta or cottage cheese....so I bought it!!!!....now grandma doesn't have to toil in the kitchen...I bought some rapini and fancy mushrooms to make as a veggie along side...oh yes, it's a meat lasagna....so thanks again ladies, much appreciated.
