My hubby had hand surgery so we stayed in and this is what I served

Belgian Endive, Celery Root and Pear Salad with Hazelnut Vinaigrette

Potatoe Wrapped Halibut with Sauteed Spinach with Lemon Dill Sauce

Chocolate Truffle Tart

 
Hope hubby is feeling better. That wonderful dinner would certainly help to speed up recovery.

 
And I have macadamia nut oil (of all things) that I bought on a very good sale. Don't wanna waste it

 
Here it is- enjoy

Hazelnut Vinaigrette

2 Tab sherry vinegar
1 shallot, minced
1/2 tsp dijon mustard
1/4 cup hazelnut oil
salt and pepper to taste

in bowl combine vinegar, shallot and mustard. Slowly drizzle in oil, whisking til smooth. Season with salt and pepper.

 
No, the only problem I had was initially not slicing

the potatoes thin enough. At first my mandoline was set at 1/8 in. When I tried to fold the slices over the fish to seal they wouldn't bend. I sliced new potatoes on about 1/16 and they worked perfectly. The only other thing I would do is blot the fish and potatoe slices dry. Mine slipped off the fish a bit. It was very tasty. It has a very mild flavor so I think it definitely needs a sauce. I chose a lemon dill beurre blanc.
