Last of the summer peaches...

Peach crisp just hot and bubbly out of the oven.

Question: None of the recipes I looked at included cinnamon. This is a desecration as far as I'm concerned. One even explicitly omitted the cinnamon in a variation of an apple crisp recipe. For me a peach dessert must have cinnamon (as well as cherry desserts).

Are there any fruits that you require a certain spice for?

For me, I prefer no cinnamon with peaches. And I get very depressed as peach season ends. My fave.

Nutmeg, lots of it soft and freshly grated with pears and apples. Cardamom with pears, lavender

with figs. Never enough cinnamon for apples.

Cinnamon for blueberries and saskatoons, also with lemon.
