Grilled Potatoes with Flavored Butter & Onions:
Par-bake the number of Idaho potatoes you'll need until just beginning to get tender. Remove from oven and cool enough to handle. Slice each potato vertically (but not all the way through) into about 4 sections. Place a pat of butter (can use gorgonzola butter, garlic butter, parmesan, any kind you like) and a fairly thick slice of onion between each slice and wrap the potatoes tightly in foil. Grill until fork tender.
Another thing I've done with grilled or baked potato is to finely chop par-cooked broccoli and mix it in with butter that is first combined with shredded cheddar cheese. Place the broccoli butter mixture between the potato slices, wrap in foil and grill.
You can use any of your favorite potato stuffings this way. Bacon & cheese, chopped ham & cheese. But it's best to mix all your ingredients in with butter first to hold it together.
