Left Over Turkey recipes?

I bought a 12 lb. turkey and fed four people yesterday. Other than putting away all the dishes, crystal, and silver, today will be spent taking the meat off of the bones of the turkey and making stock with the bones for the freezer. What are your best recipes for left overs?

 
My first meal for leftovers is exactly what I had yesterday--turkey, gravy, stuffing,

cranverrry sauce. LOL

I don't think I can take another bite of that. Good as it was, but I'm over it. I did find a Hot Brown Sandwich in the T & T that I might have. The rest is going to have to go into the freezer for a week or two. That's the ideas I'm looking for.

 
Make a turkey Caesar salad for one dinner and other ideas inside

make a meatloaf "crust" in a deep pie plate, bake it, pat out the fat, pour a bit of salsa in it then mound mashed potatoes that you have mixed with sautéed mushrooms, onions, celery seed, other stuff if you like- in the "crust". Top with cheese and a couple slices of tomato. Bake at 350 for about 20 min. Meatza Pie!

Make turkey tacos or turkey enchiladas. Or burritos. Or Quesedillas.

Mix extra things with dressing and stuff peppers or hollowed-out zukes with it and bake.

I have a friend that layers all leftovers (dressing on the bottom)- even cranberry sauce- in a roasting pan, sprinkles deep-fried onions on top and bakes. It is surprisingly good. A small pan of that in the freezer would make for a delicious dinner- freeze unbaked.

Our day-after dinner is always cut up turkey in gravy over mashed potatoes and dressing with cranberries. That is for tonight!

I've taken leftover cranberry sauce, pureed it and swirled it into cheesecake batter and also put some on the finished cheesecake top.

Turkey and Mushroom Risotto

8 cups Day-After Turkey Stock
4 tablespoons (1/2 stick) unsalted butter, divided
1 small yellow onion, thinly sliced
2 cups assorted fresh mushrooms (preferably wild, but white buttons will do), thinly sliced
2 cups arborio or carnaroli rice
1 cup shredded leftover turkey meat (optional)
1/2 cup shredded Parmesan
Kosher salt and freshly ground black pepper
2 tablespoons finely chopped flat-leaf parsley

Bring stock to a simmer in a medium pot over medium heat. Reduce heat to low. Cover and keep warm.
Meanwhile, melt 3 tablespoons butter in a large pot over medium heat until it begins to foam. Add onion. Sauté, stirring occasionally, until onion is soft and translucent and just beginning to turn golden, about 5 minutes.
Add mushrooms; cook, stirring occasionally, until soft, and any liquid released has evaporated, 5-7 minutes.
Add rice; stir to coat. Add 1/2 cup warm stock and stir constantly until liquid is absorbed. Continue adding stock by 1/2-cupfuls, stirring constantly, until rice is tender but still firm to the bite, about 20 minutes. Add leftover turkey meat, if using; stir to combine and to warm through, adding a little stock or water if necessary to keep mixture creamy, about 3 minutes.
Stir Parmesan and remaining 1 tablespoons butter into risotto. Season to taste with salt and pepper. Divide among warm bowls. Garnish with chopped parsley.

Pat’s notes: A very subtle flavored risotto. Make sure the turkey stock is rich and full-flavored. Added fresh garlic after sauteeing the onion. I also added some diced zucchini, crookneck squash toward the end and stirred in ribbons of fresh spinach.

one I grew up on -- we used to have it every year with the Thanksgiving leftovers. Comfort food!

 
On a roll for sure- how about BBQ turkey pizza?

simmer turkey in BBQ sauce. Get a crust ready, spread the BBQ on it making sure turkey is everywhere. Add peppers, onions, mushrooms, black olives or whatever you like then use cheddar cheese over all instead of mozzarella. Sprinkle parmesan over top and bake. Yummy!

 
Wait a minute....fried dressing with an egg on top for breakfast?

Orchid posted that in the thread. Hmmmm- never thought of doing that. I guess it would be sort of like fried Scrapple depending on what you put in the dressing. Mine has bread, celery, garlic, onions, fresh sage & thyme, Italian sausage, giblets, Portuguese sausage, mushrooms, butter, chicken stock and just a bit of cream. I can feature it fried with an egg on it in the morning.

Why not!

 
I made a Mex casserole last night with leftover pork. It would be even better with turkey.

saute onions and celery
add good moroccan cumin, ground coriander
add rice to coat
gradually add chicken broth
add 1 mini can chopped chilies
1 -2 chipotle in adobo with some adobo
1 small can diced tomatoes
chopped cilantro
pork (turkey) cubes

Then I just let it go until I got the consistency I wanted and it was absolutely worth making again.

I tried it with more cilantro, sour cream and salsa verde on the side but it didn't even need it.
