Lemon-Ginger Crepes

Spread with cream cheese and rolled up, these were very thin and delicate tasting:

1 cup milk

1 cup flour

1 egg

1 Tbsp sugar

1 Tbsp canola oil

1 tsp baking powder

2 tsp powdered ginger*

juice of 1 lemon

Combine all and fry in a little butter in hot pan. Flip and repeat when you see bubbles.

I was trying to make fluffier pancakes by adding the lemon juice (to react with the baking powder).

'Didn't work (I told you I'm not a baker) but I ended up with these delicious "crepes" - yeah, that's it, they were supPOSed to be crepes!

*or 2 Tbsp freshly grated ginger
