Lemon Poppy Seed Cookies
2 cups AP flour
1/2 tsp baking soda
1 &1/2 tsp freshly grated lemon zest
1 tsp ground coriander
2 Tbs poppy seeds
3/4 cup salted butter, softened
1 cup white sugar
2 large egg yolks
1 large whole egg
1&1/2 tsp pure lemon extract
Preheat oven to 300º F
In medium bowl combine dry ingredients, coriander & zest & seeds. Mix with whisk & set aside. In large bowl cream butter & sugar at medium speed. Scrape down bowl & add eggs, yolks & extract. Beat medium until light & fluffy. Add flour and mix low until combined, don't over mix. Drop by rounded tablespoons onto ungreased baking sheet, 2 inches apart. Bake for 23-25 minutes until cookies are slightly browned along edges.
Remove with a spatula & cool on a cool surface.
Makes 2 dozen.
