Lisa, if you are in Louisiana (and not Los Angeles), you'll have no problem growing thyme...
I'm about 50 miles north of the Gulf Coast, in AL, and my thyme grows very well in a spot next to my house. I bought two pots of it at Home Depot a few weeks ago, and it's doing fine, still in the pots, waiting for me to stick it in the ground with my other plants. Thyme likes cool weather, so plant it now, and it will thrive until the summer gets hot. It gets puny in the summer, but comes right back when the temps turn cool. It likes ordinary soil, and I find it does best on the East side of my house, where it gets morning sun, and shade in the afternoon. If your climate is a little colder than mine, transplant it to larger pots and bring them inside if there will be a real hard freeze. We had two nights of low 20's recently, and my thyme survived very well, because it's below freezing for only a few hours, I guess. There are many varieties of thyme, and one that's fun to use is lemon thyme, that tastes just like it's name. Another winter herb to plant now, same conditions, is parsley (also sage and rosemary).
