Little announcement: My blog turns 5 today! (more)

That is wonderful..nice accomplishment. I read the article about

the apple cake and am interested in Grains of Paradise.
So I went looking and there are so many companies selling them in many different forms. Which brand do you have and it is seed, grain, whole ? Not sure what to buy here.

I included a link in the blog for the exact product I have - almost all my spices I get from Spice House these days, some from Penzey's - I guess they are owned by the same people, or at some point were? Anyway, I love their stuff. If you click on grains of paradise in the text, it will take you there

I bought them whole. the smell is amazing, and to be honest I think they are a very important component of this cake - without them it would not be the same

Sally, I'm really intrigued by the grains of paradise you use in the apple spice cake

I like to grind it over fresh tomatoes, for me it highlights the flavor of the grain. I also like to use it over grilled salmon or sauteed shrimp. Pretty much like I would use pepper, but in all those cases I add it at serving time just to have a better taste of the spice

 
I made the apple spice bundt cake at your site, Sally!

It got RAVE reviews! The grains of paradise really has a distinctive flavor. I expected the cake to be hot but it wasn't at all.

It was an adventure trying to track down the spice. I found small African grocery store where the lady sells it by the pod and knows it as alligator pepper...too cool! She was very surprised we were going to bake with it as she says they just chew the seeds. We was concerned about these two white ladies who were crushing it for a cake and kept trying to warn us that it could blow our head off! We are taking her a piece tomorrow to prove we are still alive smileys/smile.gif

Grains of paradise (aka alligator pepper) - pod contained 3-1/2 tsp seeds which weighed 10 grams, or .2 oz
