I didn't look at all 49,800 recipes so some may be the same but it looks like Julia was very busy.

I made 'Julias' onion soup this past week.......yes, so many authentic recipes that I...

did a combination of the best ideas from both recipes on line and people who have made it. My final soup used chicken stock instead of beef, white wine instead of red, finished with cognac, topped with gruyere and parmesan cheese and baked in the oven at 425 for 30 min. No need to broil as the top browns and the soup is real hot. This is by far the best onion soup I've ever had!!!!!!

 
Here's what I did...

I chopped the onions instead of slicing.
I used beef stock.
I added a splash of sherry vinegar and used sherry instead of white wine.
I did not need to broil, as the crocks were bubbly and the cheese browned with just oven temps.

This was a test for my soup crocks.

They passed with flying colors!

(and the soup was wonderful!)

 
does anyone else have a pot of French Onion Soup on the stove after this post? I couldn't resist

 
not "authentic", but really good. Upon searching for the recipe here, I found a Tony Bourdain

version, and I liked the balsamic he adds, so I added some. And I used white wine and had to use broth in a box---beef and a bit of chicken. also a touch of worc---shire sauce mentioned in one of the versions. Anyway, it is mighty tasty and just perfect on these cooler evenings(no snow yet though)
