I had a catering gig over the weekend and made your salmon cheesecake. I got a call from my client last night and it was THE hit of the party!

 
Hi CathyZ, I would like to make your smoked salmon cheesecake

for a Sunday wedding brunch. I love that I can make it 2 days ahead! We're staying overnight at a hotel the night of the wedding so I have to drop it off at the house of the brunch the day before. Long story for a short question; Can I leave it in the springform pan until the morning of the brunch?

 
I'm not Fran but I usually serve it with one or more of these...

Toasted thin baguette slices, thin rye cocktail bread, pita crisps, sometimes just water crackers, sometimes bagel chips. It is good on most anything- just be sure you have a sturdy enough cracker to spread on without the cracker disintigrating.

 
Thanks Cathy, I'm hosting a wedding shower in a couple of weeks and think I will make this. I

wasn't sure what type of cracker to use and I appreciate your help so much. (you are such an encourager, I might add, and I appreciate the help you give people like me who sometimes feel out of their comfort zone.) (I'm learning, though!!! sigh....)
