Looking for desserts that can be made ahead of time and frozen...

for a surprise birthday in late June. I'm looking for something that will be ready to go on the buffet table after thawing; no time to fiddle with frosting anything. Also these will need to be served at room temp.

Any ideas you might have will really be appreciated

 
A flourless chocolate cake or individual ones would be good - can serve with cream anglaise instead

of whipped cream, which wouldn't hold up in the heat if it's outdoors. Will this be held indoors or out? Can also top the cake(s) with a chocolate glaze.
Also brownies, cupcakes, individual fruit tarts, etc.
I have some great recipes for flourless chocolate cakes and brownies if you're interested.

so, I would like to do a variety of desserts on a buffet table. Could be cake, bars, crisps, etc
It is a surprise party for hubby and I have 5 days while he is out of town to make as much food as possible. That is why I want to do things that I can freeze.

 
biscotti also. They can be hidden. Also Nick Maglieri's frozen chocolate mousse cake is to die for .

it could come right out of the freezer and onto the table - by the time it is cut it it will be room temp.

 
My go to for picnic type dessert is

Sandwiches made of thinly sliced pound cake and nutella. O-M-G It disappears as fast as it is set out.

 
cheri, If you can go to the library seek out Elinor Klivans Books, Bake & Freeze Desserts and

Bake & Freeze Chocolate Desserts. You may read the reviews of both of these books on Amazon.

take a look in T&T desserts. lots of goodies would work. most of the brownies and many bars

a nice pound cake freezes well and a fruit sauce and fudge or caramel sauce can be made ahead and refrigerated to serve with it. Meryl's Mexican Chocolate Icebox cake is a winner. I'm thinking it would freeze quite well, but haven't tried it. It's in T&T cakes.
