Looks good - Apple Cranberry Stuffed Pork Roast

Meryl, if you make this, what sides will you use? I bet mashed sweet potatoes

with a chipotle in adobo would be awesome. Sautéed broccoli rabe and an autumn salad of some sort. I've never done the double butterfly. Might need to practice on an old loaf of unsliced bread first!

I eat mostly vegetarian, I have never even made a pork roast! But I really want to do one, and this sounds sooo good.
