Lost Recipe from Gail's (Brian's chicken)

Hi,

Old recipe from 2001 Panko crusted fried chicken dipped in soy sauce and baked until caramelized TO DIE FOR. Tamiko's came up in search. Any clues??

Brian's Chicken
My 12 year old nephew likes this
chicken so much that he'll make it on
his own. Sorry - it is fried, but I
think that you can probably skip the
frying and just bake it first.

Brian's Chicken
2 to 3 broiler-fryer Chickens, cut into
small pieces
Salt
All purpose Flour
2 Eggs, beaten
Panko
Salad oil for deep frying
Sauce (recipe follows)

Salt and coat the chicken with flour.
Dip in beaten eggs; roll in panko. Deep
fry in oil until light brown. Drain
chicken on paper towels.

Sauce
1 cup Soy Sauce
1 cup Sugar
1/2 cup Sherry or Mirin
White Sesame Seeds

Combine soy sauce, sugar and sherry;
bring to a boil. Dip chicken in sauce.
Sprinkle with sesame seeds. Bake in a
foil-lined pan at 300 degrees for 45 -
50 minutes. Serve hot or cold.

well, you provided some good clues. It wasn't a clean search, more of a down & dirty

one.

I searched Epi's "Gail's Swap" forum for "Brian", then searched within those for "chicken". Luckily, you mentioned Tamiko and Panko and the poster Timid mentioned "Brian's Chicken" and most important, gave a tread number. Then I went out to the WayBackMachine archive and was able to look up the thread there.

If I were a clever computer researcher, like Lisbeth Salander in "Girl with a Dragon Tattoo," I could have probably given you the chicken's DNA profile.

 
I didn't know Gail's Swap was at that site. It was fun to look through some of the old posts.

I came across this recipe, and am confused by the directions. It says to place cukes and onions in a gallon jar and boil???

BREAD AND BUTTER REFRIGERATOR PICKLES

cucumber slices
3 sliced onions
3 c. sugar
1 c. water
1 tsp.celery seed
1/3 c. salt
3 c. white vinegar
1 tsp. turmeric
1 tsp. mustard seed

Fill gallon jar with pickle slices. Add
onions. Boil
together. Mix other ingredients together and
pour over pickles
and cure in refrigerator 7 days. Keep in
refrigerator. Do Not
Can.

 
I am guessing that you boil the sugar, H20, celery, salt, vinegar, etc...then add the liquid over

the cut cucs and onions.

Refrigerator Bread and Butter Pickles


Pickling cucumbers to fill a gallon jar
3 onions sliced
4 cups sugar
4 cups vinegar
1/3 cup plain salt
1 1/2 tsp each turmeric, mustard seed and celery seed

Combine sugar and vinegar in small saucepan over low heat to dissolve sugar. Add spices. Pack sliced cucumbers and onions in jar very tight, add liquid and spices, seal and refrigerate.

These bread and butter pickles are a wonderful little side dish to set out with just about any meal, but our first love will always be adding them to sandwiches.



Note: The refrigerator pickles don't need to marinate very long at all before they're ready to eat, usually just 24 hours or so. As to how long they keep ... I'd say "the same as any other pickles in your refrigerator." They might become more mushy than crisp if you had them in the frig for a year, but I've never known them to go bad.
