I've been making these frittatas recently and they are so wonderful. I nosh on them straight out of the fridge. Perfect for when I want "food" but I don't want to make anything.
I'm trying to increase my veg intake. With these, there's a high ratio of zucchini and just enough egg to hold them together.
Reviewers mentioned they were bland, so I've incorporated a few modifications:
- Add 1/2 yellow onion, chopped and sauteed
- I've fooled with the eggs. The ratio I like best is 5 whole eggs and 5 egg whites.
- I added about 1/2 teaspoon of Trader Joe's 21 Salute seasoning
- I used kosher salt and doubled the amount (based on others comments)
- Season as you go to build up flavor, seasoning both the onions and the zucchini
- I used a 12-cup muffin tin, which I find the perfect size for a grab and go snack
- This latest batch, I also added sauteed mushrooms, which I liked a lot
