Low Carb Cauliflower Sandwich Wraps

What I really miss is the taste of stone-ground corn. I LOVE a good corn tortilla.

I wonder if there's a corn flavoring extract (preferably natural and not semi-toxic, if you know what I'm getting at) that could be added to this recipe to give it a corny kick?

I made these tonight and prepared tacos with them. They were really amazing. No taste of cauliflower which was the biggest surprise, the second is that they really held together for the consumption of the taco. However, the extras that I made up sitting on the plate didn't fare so well. So, leave them on the rack and make one taco at a time. I did, however, bake them 10 minutes longer than the time specified. But that I'm sure has to do with thickness/moisture content. Just bake until they're set up, flip, and continue baking until they start browning. Here are some photos of my preparation:

Those look fantastic.

I wonder if you could add a little masa to the cauliflower to give it that corn flavor. If you added just a little bit, it shouldn't raise the carb count too much. Thanks for posting the pics. I want a taco right now.
