Low carb indulgences today

Thawed & nuked a package of frozen artichoke hearts, drained well. Put in a small gratin dish. Mixed equal parts leftover TJ's hollandaise & cream & drizzled over them, topped with a big handful of parmesan. Baked at 400 for about 30 minutes then ran under the broiler. Yum!

Coconut pudding made with TJ's cream of coconut, cream, sugar free vanilla Torani's syrup, egg yolks & two tablespoons cornstarch. Added a tablespoon butter & more vanilla when I took off the burner. Really good.

Would be Mounds flavor with some cocoa or a square of unsweetened chocolate added.

 
I am realizing that I have to get back on the low carb especially after reading Wheat Belly

a doctor friend of ours that is not one to follow diets or fad diets and trends is on it so I felt it was worth looking at. Some of it makes sense so now that we have made it through the family reunion and another trip, we are about to hunker down and start working on a diet that works for all three of us for health reasons and that should bring some of the weight loss DH and I need. I am just hoping that these will help DD's fibro and IBS in particular and yet she is SUCH a carb lover.

I really need to try some baking with coconut and almond flours and some sugar substitutes. But first I need to find some place to get those flours without spending $12+ a pound for them. I have the grain container for my VitaMix so I am thinking about trying to make my own and I noticed some coconut that is finely shredded and doesn't contain any sugar or such at the Patel grocery store yesterday. Thought I might can further process a little more into a flour though this isn't far from being a flour.

 
It just works for me & is easy. My grandparents were a physician & R.N.

They were true believers, although they did finally settle on Zone. Zone is way too much organization for me, although it would be nice to have the variety. I'm down about 25 pounds so far.
