Macaroni and Cheese

I lost my recipe from Deb/TN on Gail's Recipe Swap. Does anyone here have it? It's so nice to see all you people here from Epi.

Preheat oven to 350 degrees.

1/3 of a block of Velveeta Cheese sliced with a cheese cutter. (I do this first so it will soften)

Fill sauce pan with water with 1 tsp of salt and bring to a boil. Add two cups of small or medium elbow macaroni and return to a boil. Cook for approx. 9 minutes and turn into a colander to drain as quickly as possible. I want the macaroni to stay as hot as possible as to melt the cheese.

While draining the Mac, put half a stick of margarine in the pot, and the sliced cheese on top of the butter/margarine. Place lid on pot with while going to the next step.

Take one egg, beat it and mix it with 2 cups milk. Go back to the pot and stir mac, cheese and butter until the cheese is pretty well melted. Doesn't have to be completely melted. Add beaten egg and milk and stir. If the milk isn't just about to cover the mac, add more and stir again.

Pour into a two quart casserole and bake for 45 minutes or until slightly browned.

for some of the old Gail's favorites. I don't think this chicken divan is there(maybe it should be) but sometimes I find what I need up in T&T from the old forum.

from my homepage. Chicken, of course, may be substituted. 'The' Turkey Divan Our whole family's favorite! The breast slices are cut from the turkey and saved for divan before we eat the holiday meal. No mushroom soup here, please.
1/4c. butter
1/4c. flour
1 1/2c. chicken broth
1T. sherry (the real stuff, not that cooking type)
1/8t. nutmeg
1/2c. whipping cream, whipped
1 1/2lb. broccoli, cooked and chopped (stems peeled-that is why frozen broccoli doesn't work) 5-7 large turkey breast slices
1c. parmesan, divided

Add flour to melted butter, slowly stir in broth. Add sherry, nutmeg, and 1/2c. cheese, heat until cheese is melted.

Gently fold in whipping cream. Place hot broccoli in 11x7 broiling dish. Top with turkey. Pour sauce over and sprinkle with remaining 1/2c.cheese.

Broil 3-5" from heat source, until bubbly and lightly browned.
Serves 4 (maybe 5).
We serve with fruited jello and French bread.

Ellen in LA: Here's a fabulous T&T Chicken Divan casserole. People love it.

Someone posted this a while ago. (Please forgive me for not remembering.) It's so good and easy. The little bit of lemon juice and curry powder give it a nice twist. Every time I make this, the dish is practically licked clean.

CHICKEN DIVAN - Serves 8 (individual servings but may also be made in one dish)
8 nice plump, boneless, skinless chicken breasts Broccoli florets
Sauce: 3 10 oz. cans cream of chicken soup
1/4 cup milk
2 cups mayonnaise (or less if you want) 1 tbl. lemon juice 1 tsp. curry powder

Topping:
1 cup grated cheddar cheese
1 1/2 cups toasted bread crumbs
1/2 cup pimento strips (optional)

Method: Steam chicken - set aside. (I actually prefer baking mine.) Steam enough broccoli to put a single layer in your individual serving dishes.

Combine soup, milk, mayo, lemon juice and curry powder - mix well. Place broccoli in individual dishes (or in casserole) - top with a chicken breast. (I usually cube up the meat and put it all in a casserole pan.)

Pour sauce over chicken - sprinkle with cheese and top with toasted bread crumbs.

Bake at 350 degrees for 25 to 30 minutes. Garnish with pimento strips, in a design, if you wish.

NOTE: The sauce in this recipe freezes well so if you are only making Divan for 2 or 4 - make the whole sauce recipe and freeze for later

This is so good you never need another recipe for turkey divan. I serve it with a pear and bacon and blue cheese salad with a shallot dressing that I think Sally also posted. Where has she gone? She was great. I follow her suggestion of slicing the first slices off a roasted turkey or turkey breast and freezing them for this meal.
