Made 1/2 batch of Marilyn's Thai Foil Fish Packets again - yummy! Used a little less fish sauce

This sounds great for hot summer day. Question: I already have so much rice here

do not want to buy Ready Rice. Should I cook up some regular rice to almost done, then add to the fish package?

 
Karen, I think you can cook your rice all the way and then use it cold. From the Uncle Ben website

"Our delicious flavored rice varieties are the ultimate in convenience. That’s because they’re precooked, so you just have to heat them up and serve them with your favorite recipe or rice meal. Since they’re microwavable, they’re ready in just 90 seconds."

To match the recipe timing (as if using the prepackaged stuff) I think the cooked rice should be cold (or at least room temperature), not hot from being freshly made.

This is a totally unsubstantiated guess. As I said, I've used the packaged stuff with this recipe because I could never make consistently good cooked rice. Now that I can, I might try this idea.

 
I'd cook to almost done. Tasted Ready Rice and it still had bite

Next time I plan to use Jasmine from our vast rice pantry. Will undercook rice, slap fish on top of hot rice, cover with sauce, fold and bake. I stacked 2 defrosted flounder fillets at about 1/2" thick total and our packets were slightly overcooked at 14 minutes. If you use cold 1" fillets with the hot rice you should be okay at 14 minutes - or longer if you like your fish more than al dente. Colleen
