I used mild hungarian paprika because I didn't have anichote powder. I really wasn't sure about this and only used 1 tsp of paprika and I misread the recipe and only added 1/2 tsp. corriander. I did add some more corriander toward the end of cooking time. Served with hot sauce on the table. Hubby loved this rice. I must say I travel south quite a bit and this rivaled anything I've had in restaurants.
