The faux fried eggplant was fairly easy and really delicious. It would be great with a pasta and some salad. I've been having it plain. smileys/smile.gif

Joe's Lemon Bars were really easy and delicious as well. Pretty similar to a recipe I used to make all the timefor lemon Squares from Better Homes and Garden Cookie book. Always fun to try a new variation.
