using chopped pancetta and they were awesome. The tomatoes gave it just the right hint of acid.
I Served them with simple roasted chicken thighs which had chopped garlic and rosemary shoved under the skin and rubbed with olive oil, salt and pepper.
Richard hit another home run with this one as Hubby is already asking when I plan to make them again.
