Made the Blueberry Crumb Bars that everyone has been raving about

and they definitely deserved those raves! They are delicious! A 'must keep' recipe. I'm thinking they would be terrific with layers of granny smith apple slices instead of the blueberries (of course with sugar and cinnamon).

I accidently dumped the lemon juice called for in the recipe in the crumb mixture instead of the blueberry mixture - still was delicious!

Just made these last night for today! Oh so good!

If you go into the woods today.....and stumble upon some wild blueberries, I would suggest that

you reduce the lemon juice in the filling. I kept telling myself to do that as I was making these again yesterday and I should have listened.

But I goofed on the recipe as well (busy watching poker on TV) and got messed up.

The wild guys are tart, tasty and tremendous. But this amount of lemon juice is overpowering. I'd half it. They also have so much flavour on their own, that the juice masks some of it.

Great recipe though. It's half-gone already.

This time I used the entire quantity of pastry in a 9x9 but I will reduce it to 2/3 again next time. But I still like the filling at 100% in the smaller pan. And I'll use the cultivated berries again.

 
I'd say that it wouldn't be necessary at all. Lemon zest in the bottom crust is fine though.

I think the beauty of this recipe, besides the ease of preparation, is that it relies on outstanding fruit because that is all that there is for flavour. Blueberries are so perfect. What a wonderful way to eat them; it's like blueberry pie but much easier.

The cultivated blueberries, although very tasty, need the lift of the lemon. The wild ones, stand on their own without need of anything but a little sugar. They have such an intense flavour and lots of zing.

 
Have to add my 2 cents *g* - yup, they were delicious, although a big chunk disappeared

before it ever got cut into bars. I took it out of the oven to cool and took the dog for a walk. DH, with the nose of a bloodhound, found it and scooped out a bowl full. It seemed so crumbly that I doubted it would ever set. But, lo and behold, after it was chilled it cut into beautiful bars (minus yet another bowl full thanks to DH).

Not being able to leave well enough alone, I added the crushed seeds of one cardomom pod to the berries - a VERY nice addition I might add.
