This is a very fine recipe- of course I cannot remember where I first saw it years ago but I am glad I did. I don't even tweak it when I make it- it is perfect the way it is. I made this last night for guests and served the hens with a nice wild rice pilaf and green beens. Starter was a cream cheese and pesto torte (layers of pesto between layers of a combo of whipped Brie, cream cheese and whipped cream) with crackers and dessert was a nice chocolate silk pie. Happy guests, happy hosts.
And, by the way, I cut down the backbone while the hens are still in their plastic wrap then pop them out, wash, flatten and marinate that way instead of splitting in two pieces per bird. Nice presentation.
GRILLED GAME HENS WITH CILANTRO-HONEY MARINADE
2 Cornish game hens, split lengthwise.
Marinade:
6 T rice wine vinegar, 1/4 C olive oil
2 T minced ginger, 4 cloves garlic, crushed
1/2 tsp hot red pepper flakes
3 T honey
3 T soy sauce
3 T chopped cilantro
pepper
Mix all marinade ingredients and pour over Cornish hen halves. Marinate for at LEAST one hour -- overnight is best.
Grill hens inside an aluminum throwaway pan until almost done, using up the rest of the marinade (this will alleviate flaming), then put directly on grill for last few moments of cooking.
