My sis found this recipe in her local Lodi paper, and wOw!!!
Orange Chipotle Guacamole
2 ripe avocados, diced & mashed
1 orange, peeled, and chopped, with any juices
1/4 c. minced red onion
2 T. minced cilantro
1 T. lime juice
1-2 t. chipotle in adobo, minced
1/4 t. salt
Mix all together and chill. One amazing thing is that the orange juice prevents the guac from turning brown in the unlikely event you have leftovers...
sooo good, we had "Mexicali steaks" (porterhouse seasoned with Penzy's taco mix), roasted red and green peppers and onion (Mexico's colors!), grilled corn in the husk and hot tortillas, and played Herb Alpert South of the Border on the hi-fi! A fun cinco de Mayo!
