RECIPE: Made this last night, REC: Watermelon, Feta and Olive salad (Nigella Lawson)

but we didn't have black olives so I used diced avocado instead, and added some cucumber. It was really nice with our fried chicken and mashed potato and milk gravy dinner. At least something we served was healthy! LOL I've put our measurements in brackets for US measures.

REC: Watermelon, Feta and Black Olive Salad

Nigella Lawson

1 1/2 kg. watermelon (2 cups diced watermelon - large dice)

250 g feta cheese (4 oz feta, crumbled large)

Bunch of mint, chopped

Bunch of flat leaf parsley, separated from stems

1 small red onion, halved then sliced thin

2-4 limes, juiced

3-4 Tbl olive oil

100 g black olives (1 avocado, diced - large dice)

(3" of peeled cucumber, diced large)

Black pepper

Marinate onion slices in lime juice until they turn pink and the juice is colored pink - ~ 10 min. Cut up watermelon in a large dice, removing seeds. In a large bowl combine watermelon, feta, mint, parsley, olives (or avocado and optional cucumber). Pour in marinated onions and their juice, toss gently and add olive oil and black pepper - generous grinds. Add more lime if more piquantness (is that a word?) is desired.

Nigela serves as is but I piled it up on a big lettuce leaf, the above proportions served 3 generously.

So refreshing in the summer! It would make a nice luncheon salad on its own.

Hope you give it a try, it's certainly different and something I would have never put together on my own but now, it's my new favorite summer salad.
