Made this the other day - very good: Chicken tenders with ginger, etc.

Quick and easy.

1 lb chicken breast strips

1/2 cup buttermilk

1 tsp salt

2 cloves garlic

1-inch piece ginger

head of broccoli

black pepper to taste

squeeze of lemon juice

ALSO:

1 Tbs honey

1 Tbs Dijon mustard

Combine buttermilk and salt and marinate chicken in refrigerator, covered, overnight.

Remove from marinade and quickly saute over high heat until browned slightly on both sides; place chicken in shallow pan and preheat oven to 350. Grate garlic and sprinkle over chicken. Slice ginger into thin slices. Rinse broccoli and place over chicken, then sprinkle with pepper, lemon juice, and more salt if desired.

Whisk together honey and mustard and drizzle over the top. The addition of these seems to bring out the flavor of the chicken and the honey doesn't really add any sweetness at all for some odd reason!

Cover with aluminum foil and bake for 25-30 minutes. Serve over rice.
