For penance for all the chocolate I've been eating lately, I made salad for dinner and this dressing was wonderful.

Don't be turned off by the yogurt, it makes a nice creamy dressing with no oil. Plus this is so good for you! Figs apparently have a lot of vitamin K.

Fig-Yogurt Dressing

1/4 C plus 2 T dried figs (I used 1/4 c fig jam)

2 cups boiling water

1/2 C plain yogurt

1 T fresh lemon juice

1 T balsamic vinegar (I used fig balsamic vinegar but won't next time, it was a touch too sweet)

salt and pepper

for the salad - mixed herb greens

shaved Parmesan cheese

(I used pine nuts and 1/2 an avocado instead)

Soak the figs in a bowl in boiling water until softened, about 15 minutes, then drain.

Transfer 2/3 of figs to a blender. Add yogurt, lemon juice and vinegar and puree. Add remaining figs to blender and pulse until figs are coarsely chopped. Season with salt and pepper. toss with greens and add goodies and serve.

Since I used the fig jam I just whisked everything together and added a touch more vinegar to balance the sugar in the jam.

Really nice dressing, I will make this again.

...putting a little ancho or smoked Spanish paprika into some, and see how it comes out, too. smileys/smile.gif

 
I posted this for an Internet friend of mine and she loved it: Stuffed figs drizzled with chocolate

STUFFED FIGS DRIZZLED WITH CHOCOLATE

1/2 cup pine nuts, toasted
8 ounces cream cheese, softened
2 tablespoons grated orange zest
1/4 teaspoon fresh ground black pepper
1/4 teaspoon nutmeg
10 fresh figs, washed, stems removed
1/4 cup chocolate chips
1 tablespoon butter
1 tablespoon Grand Marnier (one reviewer used a little juice from the orange)
1 orange, sliced

1. In a small bowl, combine the cream cheese, cooled pine nuts, orange zest, nutmeg and pepper, mixing until smooth.

2. Slice each fig in half lengthwise.

3. Press about a tablespoon of the cream cheese mixture into the cut side of each fig half.

4. Melt chocolate and butter in micro 1 minute; add Grand Marnier, stir till creamy.

5. Drizzle over stuffed figs.

6. Garnish on a platter with orange slices.
